Welcome to Leible!

"Leible Coffee began in 2020 at 89 York Street in Sydney. What started as a small space has grown into four stores across Sydney, built on a consistent passion for coffee and years of hands-on experience.

Rather than focusing on just one particular style, we place great importance on carefully selecting and presenting coffees from a wide range of origins. Each season, we source coffees from different countries and regions, with the aim of expressing the unique character and qualities of each coffee as naturally as possible.

At Leible, we believe specialty coffee should not feel difficult or exclusive, but rather something that anyone can enjoy as part of everyday life. That is why we offer a range of single origin coffees as batch brew in our stores, making it easier for customers to explore and experience different coffees in a comfortable and approachable way."

"ABSOLUTE is Leible Coffee’s flagship blend, built on a base of coffees from Colombia and Brazil. It is known for its low acidity, deep chocolate notes, and full-bodied mouthfeel. It is especially well suited for those moments when you want a strong, intense black coffee in the morning. With milk, its chocolate-like sweetness and creamy texture become even more pronounced, creating a smooth and satisfying milk-based coffee.

ABSOLUTE has been a long-time favourite among many of our regular customers and remains one of the most loved blends at Leible. It performs beautifully across a wide range of brewing methods, including French press, espresso, moka pot, and milk-based coffee, making it an easy and enjoyable coffee to drink at any time."

"Explorer is Leible Coffee’s second specialty blend, built on a base of Ethiopian and Colombian coffees. As a black coffee, it highlights tropical fruit character and layered complexity. With milk, it transforms into a berry- and custard-driven cup with a creamy texture, offering an almost dessert-like experience.

Explorer is served as the second blend across all of our stores and offers a completely different style from Leible’s flagship blend, ABSOLUTE. It is especially loved by customers who are looking for something a little more distinctive and special from their usual coffee choice.

Balanced and versatile, Explorer works well across a range of brewing methods including espresso, milk-based drinks, and French press, making it a blend designed for a more adventurous coffee experience."

"Handpicked ripe cherries are delivered to the Danche washing station, where ripeness is carefully assessed by measuring sugar levels with a refractometer. Floating cherries are removed before the coffee undergoes a 48-hour fermentation.
The cherries are then de-pulped within hours, removing the outer skin while intentionally leaving most of the mucilage intact — a defining feature of the Red Honey process. This retained layer of fruit sugars dries on the parchment, contributing to increased sweetness, a fuller body, and a creamier mouthfeel.
Drying takes place under increased shade to slow the process, allowing sugars to stabilise and flavours to develop with greater clarity and balance. The de-pulped coffee is dried on raised African beds and turned frequently to ensure even, steady drying. Over 14–18 days, the coffee reaches a final moisture content of approximately 11.5%. 
Processed using an environmentally friendly honey method — a rare approach in Ethiopia — this Red Honey coffee from Yirgacheffe, Southern Ethiopia (1950–2200 MASL) sits between washed and natural styles. It combines the clarity and structure of washed coffees with the sweetness, texture, and complexity more often associated with natural processing."

"This lot comes from Gigesa village, located in the well-known Oromia region of Ethiopia. It is produced by a community of 500 growers, each typically managing around one hectare of land. On these small farms, heirloom Ethiopian coffee varieties are carefully cultivated using organic practices. This dedication to

quality not only results in exceptional coffee, but also plays an important role in supporting the local economy.

The farms are situated at elevations between 1,850 and 2,100 metres above sea level, where the high altitude creates an ideal microclimate for developing the coffee’s complex and distinctive character.

After harvest, the coffee cherries are delivered to the Gigesa washing station, where they are processed using the washed method. To preserve the coffee’s natural flavour and preventunwanted fermentation, the cherries are depulped within 6 to 8 hours of picking."
